Beef Curry with Stir Fry Veggies

Curry is a dish you can order out or eat at home. Curry is most common in Asian countries so it is layered with Asian spices. You can buy curry sauce or curry paste that has been simmered for hours, or you can make some at home like I did in the recipe below. Usually curry is also made with a piece of meat with a lot of fat to it, however, if you want to make a cheaper curry, you can just use some ground beef from the freezer. This is not authentic curry, however it’s still curry and can be made with what you can find at home. If you want extra heat in your curry you could add some peppers or some hot sauce. This recipe makes 6-8 Adult sized servings.

What You Will Need

  • 1/2 Ground Beef
  • 1/2 Medium Onion, Diced
  • 3 Garlic Cloves, Minced
  • 3 Tbsp Tomato Paste
  • 3 Cups Water
  • 2 Beef Bouillon Cubes
  • 1 1/2 Tbsp Cumin
  • 2 tsp Ground Cayenne
  • 1 1/2 Tbsp Chili Powder
  • 1 Tbsp Curry Powder
  • 2 tsp Turmeric
  • 2 tsp Red Pepper Flakes
  • 1 (12 oz) Bag of Frozen Stir Fry Veggies
  • Dutch Oven
  • 3 cups White Rice, Prepared

Directions

1. Heat the dutch oven over medium high heat. Add beef, onion, and garlic. Break up meat and stir until fully cooked. Add spices, tomato paste, water, and bouillons. Stir and cook until thickened.

2. Once thick, add frozen veggies. Break up, and stir into curry. Cook until mixture is boiling. Remove from heat. Serve about 1/2 cup of rice with about 1/2 cup of curry.

Shrimp and Broccoli Pizza

This recipe makes enough dough for 2 pizzas, but the rest of the ingredients are for 1 pizza!

Pizza comes in all shapes and sizes, with different flavor profiles and toppings. When you make homemade pizza you can make your dough sweet or spicy, you can use a mild, strong, soft or hard cheese, toppings are limitless. Pizza is a blank canvas. For this recipe, I first though of shrimp pizza after I made shrimp lo mein with the other half of this bag of frozen shrimp. I wanted to make a pizza featuring shrimp, and I thought then that a cheese sauce would be a good pair, and then broccoli seemed to also be a natural pair. So this pizza was born. The cheese sauce for this pizza was made with just estimates. I make this exact cheese sauce for mac and cheese and so you just add milk until your desired looseness is met. If you make this recipe the way I did, you will have 1/2 the cheese sauce left, so boil 1 1/2 cups elbow macaroni, and you can have a side of mac and cheese with pizza (which is what I did). Each pizza makes 10 slices, giving about 5 adult servings per tray. As noted above, this recipe makes 2 crusts, but the rest of the ingredients are enough for 1 pizza, so alter the recipe if you want to make 2 shrimp pizzas.

What You Will Need

  • 3 1/2 tsp Active Dried Yeast
  • 2 Cups Warm Water
  • 6 Cups & 4 Tbsp Flour Separated
  • 3 Tbsp Oil
  • 2 Baking Sheets, 13 x 18in, 1/2 Baking Sheet
  • 1/2 Medium Diced Onion
  • 4 Tbsp Butter, 1/2 Stick
  • 1 Block White Sharp Cheese, 8 Oz
  • 1 1/2 Cup Milk
  • 1 Bag Broccoli, 16 Oz Thawed and Dried
  • 12 Oz Frozen Cooked Shrimp, Thawed and Tail Removed
  • 1/2 bag Mozzarella, 16 Oz
  • Non-stick Spray
  • Large Frying Pan

Directions

  1. To Make Dough: In a bowl, mix together Yeast, Warm Water, Flour, and Oil. Mix until a smooth dough forms, then set aside and let rise til double in size, 45 minutes to 1 hour. Turn out onto a greased countertop and divide into 2 portions for 2 pizzas.

2. In a large frying pan, melt butter and saute onion. Once onion is sauteed, add flour and stir constantly until flour is cooked out. Add milk then stir til smooth, add more milk as necessary. Dice cheese into 1 inch cubes then add to flour mixture. Stir off the heat until all cheese is melted. Set aside.

3. Heat oven to 400 F. Spray both baking sheets with non-stick spray, add dough and spread evenly over the bottom to edges. If dough pulls back from the edges, let rest for 5 minutes before trying again. Once pulled to edges of pan, top with 1/2 cheese mixture and spread to 1 inch from edges of crust. Add broccoli on top. Bake for 15 minutes then remove.

4. Add shrimp and mozzarella to 1/2 baked pizza. Return to oven and bake for another 15 minutes. Let cool for 10 minutes before serving to prevent cheese sauce from running out.

Homemade Chicken and Broccoli

Chicken and broccoli is my favorite Chinese food. I’ve been eating it since I was a kid and I hear a lot of other people like it too. So, as a result, this dish was formed. When you choose to make this, you can substitute worcestershire sauce in place of soy sauce if you don’t have much ginger or garlic, since worcestershire has soy, ginger, and garlic in it. I used 2 small chicken tenders to make this, however, it wouldn’t be a bad idea to use a pound of chicken breast instead if your love Chinese food, or if you have a larger family than two to feed. Though this tastes very similar to takeout, this dish tastes just as good if not better with the sesame oil, and garlic powder coming through even more than takeout!

What You Will Need
  • 1 cup Chicken (Brest or Tenders)
  • 3 cups Broccoli (Fresh or frozen)
  • 2 Tbsp Oil
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Oyster Sauce
  • 1 tsp sesame oil
  • 2 Tbsp ground ginger
  • 1 Tbsp garlic powder
  • Pinch of Flour
  • Wok/Dutch Oven & Spoon
  • 1 1/2 – 2 cups White rice
  • Medium Saucepan
Directions
  1. In a medium saucepan, add 1 1/2 – 2 cups white rice. Rinse the rice under cool water 5 times. Add an equal amount of water to rice. Place over medium heat. Once boiling, cover and reduce your heat to the lowest setting.
  2. Place your wok/dutch over over medium high heat, and add oil. Meanwhile, half your chicken and slice it, then add it to the oil. Prep your broccoli now if you are using fresh.
  3. Stir your chicken and cook it until the chicken looks cooked externally. Add your broccoli (if using fresh add 1/4 cup water). Add to your mixture the rest of the ingredients. Continue to stir and cook until you broccoli is cooked to your desired texture.
  4. Remove from heat, and serve chicken and broccoli over rice.

Broccoli Sharp Cheddar Carbonara

I make carbonara quite often. If you want an adult mac & cheese, this is perfect for dinner dates, or for the whole family. This carbonara recipe is more authentic Italian than most, because carbonara is not supposed to use milk/cream, however many choose to use them to thicken and make a creamy sauce. However, as long as you don’t over cook your eggs when adding your pasta, your sauce will come out plenty creamy. This recipe is unique because I have added sharp cheddar to the cheese sauce. This makes the sauce less mature with the parmasean flavor and a little more like a homemade mac & cheese. I also added broccoli for a healthy touch and to add color to this mono-toned dish. This recipe made 5 adult sized portions.

  1. Steam 1/2 a small head of broccoli, about 2 cups.
  2. In a large sauce pan, bring water to a boil. Once boiling, add 12 Oz of spaghetti. Boil until al dente.
  3. In a medium large serving bowl, mix together 2 eggs, 1 cup of grated parmasean, and 1 1/2 cup of chopped white sharp cheddar.
  4. Once noodles reach al dente, take 1 cup of pasta water. Add 1/4 cup to your cheese mixture, and stir for 30-45 seconds.
  5. Strain your noodles and shake 3 times before adding to cheese mixture. Move quickly and begin stirring noodles till sauce becomes smooth. Add your steamed broccoli and stir. Serve right away.

Broccoli Pasta Salad

Pasta salad is a summer staple. Cool foods are so refreshing in the summer and all the fresh veggies make it so delicious! For this recipe, I used frozen broccoli. You can use fresh, but I just prefer how much longer frozen veggies last. I used 4 small onions and that was all I really needed. This recipe is really simple and doesn’t take long to make at all. The broccoli adds good flavor and texture, but most of the flavor comes from the onion and Italian dressing. This recipe also made a lot of pasta! We probably got 6-7 side sized servings from it.

  1. Dice up 1/4 a head of Broccoli and stream it for 10 minutes or until fork tender. Or, microwave a bag of frozen Broccoli as directed on package. Set aside and let cool.
  2. In a medium pan, bring water to a boil. Add 1 1/2 cup dried macaroni and boil until al dente. Strain your noodles, rinse with cool water, strain off excess water, then transfer to a medium-larger serving bowl.
  3. Dice up 1/2 an onion or 4 shallots and add them to your pasta.
  4. Strain your broccoli and run under cool water for a few minutes. Add all of your steamed broccoli (1/2 the bag) to your pasta. Add 2 Tbsp italian dressing, 2 Tbsp Ranch dressing, and 2/3 cup mayo. Add 1 Tbsp italian seasoning, and 2 tsp paprika. Stir. Serve immediately or chill before serving.
