Seafood is always a nice treat. Seafood is somewhat available where I live, but it’s not always fresh or terribly affordable. For that reason I find flash frozen seafood to be both affordable and just as good in quality as fresh. Seafood goes great with oil, that’s what there are so many recipes for seafood with an oil and butter sauce. This tilapia and shrimp also have a very light flavor, so adding chives adds a nice flavor that might get lost if you choose a stronger fish like salmon.This recipe takes only as long as it takes to cook your noodles. The tilapia cooks up very fast and the shrimp, if frozen and pre-cooked, only takes about a minute to cook before you’ll have to start worrying about over cooking. This recipe made 4 Adult sized servings.

What You Will Need

  • 2 Fillets of Tilapia
  • 1/4 Cup Oil
  • 3 Tbsp Butter
  • 1 1/2 Cup Shrimp, Frozen, Shelled, and De-Veined
  • 2 Tbsp Chopped Chives
  • 3 Cups Cooked Pasta

Directions

1. Begin boiling water and cooking pasta of your choice. Add oil to a frying pan and place over medium heat. Once hot add tilapia and butter. Cook for 2 minutes, then flip and cook for another 2 minutes.

2. Break up tilapia into large chunks. Add the shrimp, coat, and heat until warmed, Stir in Chives, then remove from heat. Strain pasta, plate, then top with seafood and some oil. Top with grated parmesan if desired.

Baked Pepper Tilapia Over Lemon Rice

Baked pepper tilapia over lemon rice is a simple and healthy weekday meal. The tilapia is prepared minimally to keep it’s natural flavor, and the rice is cooked with all the added flavor you could need. This recipe is also a great use for leftover rice. Just add it to your dish, bake and serve. This recipe makes enough servings for 3.

What You Will Need

  • 3 Cups leftover white rice
  • 2 Tilapia fillets
  • 1 Tbsp lemon juice
  • 1/4 cup chicken broth
  • 1 Tbsp butter, divided in half
  • Baking dish

Directions

1. Heat oven to 350 F. In a baking dish, mix together rice, lemon, and chicken broth, then spread to an even layer. Place tilapia on top, then coat tilapia with pepper, the top with a pad of butter on each.

2. Bake tilapia and rice for 10-12 minutes. Remove from oven then serve right away.

One-Pan Shrimp and Spinach Pasta

One-pan meals are easy to make and greats a great tasting dish. This one-pan meal is no exception. The chicken broth is absolutely delicious in this dish, then the milk and parmesan add a bit of creaminess to the sauce. The spinach also has it’s own flavor though it imparts a bit to the broth, then the shrimp don’t get much time to add to the over all flavor, but they do add a unique flavor, so not every bit is the same. I made some alterations to the recipe since I made it. I added too much broth at the beginning, so my dish was very runny, almost a sou;p. I also altered the order of adding the ingredients in the beginning. I added the pasta first, but I should have started with the spinach first, because I wanted the spinach to boil for at least 15 minutes total, but the pasta only needed about 14 minutes. This dish was absolutely delicious! It made 4 large adult sized portions.

What You Will Need

  • 2-3 Cups Washed Spinach
  • 4 Cups Chicken Broth
  • 2 Cups Rotini
  • 1 1/2 Cup Cooked Shrimp
  • 2/3 Cup Milk
  • Large Saucepan

Directions

1. Begin by placing your broth in your pan and heating it over medium high heat until it boils. Add your spinach, let cook for 2-3 minutes, and then add your pasta. Let boil for another 13-15 minutes until your pasta is finished cooking.

2. Reduce your heat to medium, remove pan from heat and add your milk. After about a minute return your pan to heat, let cook until almost boiling. Add your shrimp, and stir into pasta. Turn off heat and remove from burner. Plate your pasta, then top with some shredded Parmesan before serving.

Salmon Scampi Over Spaghetti and Green Beans

This dish is easy and quick to make. Within 20 minutes from fridge to table, this meal makes easily 5 adult sized servings, and can easily make more by cooking more pasta. This salmon scampi was made to emphasize and compliment the natural flavors of these ingredients. The dish tastes as it sounds, the pasta like pasta, and the green beans like green beans. All is held together by the subtle garlic oil and the powerful salmon flakes in every bite.

What You Will Need

  • 12 oz Spaghetti
  • 2 cups Frozen Green Beans
  • 2 Fillets of Salmon
  • 1/3 Cup Oil
  • 3 Cloves Garlic Minced
  • Colander
  • Large Sauce Pan
  • Large Frying Pan
  • Grated Parmesan for Topping

Directions

1. Fill large sauce pan 2/3 with water. Place over medium-high heat. Once boiling, add spaghetti and green beans. Cook according to directions on box.

2. With only 10 minutes left on your pasta, begin heating your frying pan on medium-high. Add oil and garlic, then once garlic starts to fry, add your salmon. Cook 4 minutes per side, then break into 1 inch chunks once cooked. Remove from heat.

3. Strain your pasta and green beans, then return to pan. Top with salmon scampi sauce. Stir, then plate and top with parmesan. Serve and enjoy!

Lemon, Rosemary, and Thyme Salmon

Last week was my birthday so for my birthday dinner I made this delicious meal. Pink salmon fillets baked in lemon juice with dried rosemary and thyme. When I made this, I also added 2 cloves of minced garlic, however, that added no flavor, so it is best to omit. If you have a spice grinder or mortar and pestle, grind up your rosemary and thyme so it’s smaller pieces, otherwise it is not inconvenient as is. Salmon is not only healthy, but is also tasty. Some people don’t like salmon because it is “too fishy” in flavor. So, if you don’t like the fish flavor, tilapia will be a better option for you. I was able to buy this salmon for a great price in the frozen section of Aldi’s. Serve with a small side of melted butter to enhance the flavor of the salmon. This recipe makes enough for 2 adults.

What You Will Need

  • 2 Salmon Fillets (4-6 Oz)
  • Aluminum Foil
  • Baking Sheet
  • 3 Tbsp Lemon Juice
  • Rosemary
  • Thyme
  • 2 Tbsp Butter melted, to serve

Directions

1. Heat Oven to 350 F. Place Salmon onto a large piece of Aluminum Foil. Fold up the edges. Add Lemon Juice and sprinkle the top of the salmon with rosemary and thyme. Seal the packet and place in the oven. Baked for 35-45 minutes, with an internal temperature of at least 145 F.

2. Serve the salmon immediately, and let sit for less than 5 minutes before eating.
