Spaghetti with Sausage

This meal is incredibly easy and tastes great. This is a quick meal I grew up with, and it’s impossible to get it wrong. If you are nervous about boiling the sausages, you can also bake them with some water at 350 F for about 25 minutes, but just boiling them on the stove has worked fine for me. I also used mild Italian sausage, just because my family isn’t that big on spicy food. This meal made 5 Adult sized portions. To store leftovers, you can store the sauce separately or with the noodles. If you store them separately, the rinse the noodles with cold water to stop pasta from sticking together when you reheat. Start your sausage first if you have a faster cooking pasta like angel hair, since the sausage can cook for a while before becoming over cooked, but pasta has a limited time.

What You Will Need

  • 8-12 Oz Spaghetti
  • 1 Jar Pasta Sauce
  • 5 Mild/Hot Italian Sauce
  • Large Saucepan
  • Medium Saucepan
  • Large Frying Pan
  • Colander

Directions

1. Fill the large saucepan with water for pasta. Place over medium heat until water boils. Then add Pasta and cook as directed. Place sauce into medium saucepan, place over low heat and cover.

2. Place frying pan over medium heat. Add your sausage and 3 cups of water. Cook for 6 minutes on each side. Once pasta is done, strain it. Remove your sausage and cut into bite sized pieces then add to sauce. Once everything is heated, plate pasta covered with sauce and sausage.

Slow Cooker Stuffed Cabbage with Sausage and Rice

Stuffed Cabbage, or pigs in a blanket, I’ve made before in the slow cooker. Last time, I used just beef, and that was very good. This time, to make it more traditionally, I added rice. Rice was originally added to stretch the filling to get more food cheaply. I also added some pork sausage. This added more spice to the stuffed cabbages. I also added beef broth to thin the sauce and cover the stuffed cabbages. It was another way to add more flavor than just water. I did make 10 stuffed cabbages with this recipe, but I made them very large, to the point where 1 to 1 1/2 stuffed cabbage was enough for 1 adult portion. These stuffed cabbages also freeze well. To freeze, transfer to a freezer safe container, cover with sauce, cover, label and freeze. Then they can be microwaved to reheat.

What You Will Need

  • 10 Large Cabbage Leaves with Middle Stem Removed
  • 1 lb of Ground Beef
  • 1/2 lb of Ground Pork Sausage
  • 1 Cup Day Old Cooked Rice, Cold
  • 1/2 Medium Diced Onion
  • 2 10.5 Oz Cans of Tomato Soup
  • 1 6 Oz can of Tomato Paste
  • 2 Cups Beef Broth
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Italian Seasoning
  • Slow-Cooker
  • Strainer
  • Mixing Bowl
  • Large Dutch Oven of Water
  • Thongs and Wooden Spoon

Directions

1. Bring dutch oven of water to a boil. Add Prepared cabbage leaves and boil for about 2 minutes until soft. Transfer to strainer and let cool. Place burger, sausage, and rice in a mixing bowl, add onion, garlic, and Italian seasoning. Mix by hand. Add 1 can of tomato soup to bottom of slow cooker and stir in 1/2 can of tomato paste. Place Slow Cooker on High.

2. Once cabbage is cooled, form about 1/3 cup of meat mixture into an elongated patty. Place patty on cabbage leaf and roll, tuck under ends, then place into slow-cooker. Repeat for remaining leaves, or until out of filling. Place down first layer of pigs, then spoon each with a layer of soup from a new can. Mix remaining tomato paste with remaining soup. Place your second layer of pigs, then top with remaining sauce. Add beef broth, and carefully stir. Cook covered for at least 2.5 hours or until internal temp of 165 F is reached, best if cooked on high for 6 hours for cabbage to become fully tender.

Summer Sausage Pasta

One pan dinners are starting to grow in popularity in our house. Cook your ingredients, add some broth and pasta, let it cook down, and bam! You’ve got a one pan dinner. This was homemade summer sausage we received as a gift, but it was very similar to Hickory Farms summer sausage just with a bit more pepper. The only real advice for this recipe is to be careful of the yogurt you use. You can use milk instead, but you’ll have to add about 2 Tbsp of flour early on to get the thickening. If you use yogurt, it has to be completely unflavored. A good alternative is Greek yogurt if you like to sour cream like constancy.

What You Will Need
  • 10 Oz Summer Sausage Diced
  • 1 Medium Onion
  • 3 Beef Bouillon Cubes
  • 12 Oz Elbow Macaroni
  • 1 Small Tomato Diced
  • 2 Tbsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Curry Powder
  • 1 tsp Chili Powder
  • 1/4 cup Plain/Greek yogurt (Do not use flavored)
  • 4 Oz White Sharp Cheddar
  • 2 Tbsp Butter
  • 1 Dutch Oven and Lid
Instructions
  1. In a dutch oven, add diced onion and 1 Tbsp oil. Cook until sweating. Add diced summer sausage. Cook for 2-3 minutes.
  2. Add 4 cups water and bouillon cubes. Stir and add Macaroni. Add diced tomato, and spices (garlic, paprika, curry powder, and chili powder). Stir and cover. Cook til minimum cook time for macaroni is reached according to package.
  3. Remove from heat. Add yogurt, the cheddar sliced, and butter. Stir until all the cheese is melted, you may return to heat if needed.
  4. Let cool for 5 minutes then serve.

Sausage Alfredo

I pulled out sausage early yesterday to have for dinner, but I hadn’t come up with an ideas for dinner until the time came. I opened my cabinet and saw a mix for chicken alfredo and decided that would be a fun meal to try. I cooked the sausage first, then I decided to use the box mix I had in the cabinet. I used Aldis brand chicken alfredo mix, cooked as directed, but added 1/4 cup of milk at the end, and cooked the dish covered for 15 minutes instead of 10. If you do not have an alfredo mix or sauce in your storage, I have altered this to be a recipe you make from scratch. I’ve made this alfredo recipe before and it’s very good, so it will go very well in this dish.

This was a very flavorful meal to have. The sausage fats add to the flavor of the sauce and the sausage adds flavor to this dish that would usually have such a consistent flavor. The sausage brings excitement to this common dish. I also served this dish with homemade potato salad. It was a strange combination and I wouldn’t do it again, but the strong flavor of the sausage made them taste very good together. I had found it to be a weird combination because they usually would never be served together.

  1. Cut Sausage links every 1/2 inch. Heat a large saucepan over medium high heat and add 2 Tbsp oil. Once hot, add sausage and cook fully.
  2. Once cooked, add 2 cups of water and 1 1/2 cup your desired noodles (I recommend egg noodles or fettuccine; cooking time and water levels will need to be altered for different pasta). Bring to a boil, then reduce to a simmer, cover, and cook for 10 minutes.
  3. Once most of the water has boiled off and noodles are to your desired texture, add 4 Tbsp butter, 1 cup of milk, and 3/4 cup parmesan. Stir and cook until hot and thick.

Sausage, Peppers and Onions

There are a lot of opinions when it comes to Sausage & Peppers sandwiches. The main controversy is if they should have marinara sauce or not. I have had both and though I don’t have a strong opinion and I will eat the sandwich either way, I like to make my sandwiches without marinara sauce. My main reasoning is that less ingredients is better. If I use a jar of marinara sauce, that means I will have one less meal of spaghetti or if I make meatballs, I may be lacking in sauce (because we all know meatballs taste so much better in sauce). I’m not going to write out a huge recipe on this since I don’t season it other than adding oil. I also just use mild Italian sausage, though if you like hot, that’s also popular. The only thing that’s kind of weird is that I like to cut my sausage in half lengthwise. I also try to remove the casing at this point because it can cook up kind of chewy. I cook the flat side down for a few minutes until it’s mostly cooked through, then I’ll flip them and place them along the outer edge of my pan to cook the whole curved surface. Once they are cooked, I’ll add either my fresh cut peppers & onions and a bit more oil, or just add a frozen bag of peppers & onions. Then, I serve each half on hotdog buns. I usually plan 2 sandwiches per person, and serve other dishes on the side like a veggie and a pasta.
