Cheese and chicken go so will together. Add some spices and some fresh tomato, and you’ll have a sandwich to make anyone’s mouth water! The heaviness of the cheese if freshened up by the tomato, and the chicken is complex in flavor on it’s own from the cumin, mustard, and paprika. I served mine on normal hotdog buns. I used 2 chicken tenders, about 1/3-1/2 pound, diced and cooked them. It was enough for 3 sandwiches, though there was plenty of extra cheese sauce.
Heat a pan over medium heat. Add one Tbsp oil and add diced chicken. Let sit for 4 minutes for nice color to develop. Flip chicken then sprinkle evenly over top, cumin, mustard, and paprika. Let chicken cook undisturbed on the second side for another 4 minutes.
Once browned, stir together to evenly coat chicken in spices. Continue to cook until chicken is fully cooked through.
Once fully cooked with an internal temp of 165 F, add milk and top with sliced cheese. Let cheese melt, then stir it all together into a cheese sauce and evenly coat chicken. Remove from heat.
Place chicken and cheese sauce on a bun, top with tomatoes and serve. Cheese sauce will be very hot for 5 minutes.
It all started with my Starting Point post. There I wrote my initial thoughts and ideas for this house as recorded last November. We bought this house and found many things wrong with it. We starting putting work into the house starting last October/November, and below is what we were able to accomplish so far.
Current Progress
As you can see just between the first set of photos and the second, we’ve made some big changes. We removes trees and bushes, put in raised beds, added an exterior door on the garage, and changed the accent color on the house from red to teal. Inside, we removed a lot of the latex paint off the utility room walls, we built and removed our builtin pantry, and installed a storage shelf instead. We removed the broken dishwasher and sealed the space to be used for my canning stuff. We also upgraded the light in the kitchen, painted cabinets, remove the old range microwave and added a new range-hood, as well as replaced the old leaking kitchen faucet. In the dining room, we refinished the wall after removing about 1/3 of the wallpaper in the house, and we also created a lampshade for our single handing bulb from a lantern we used at our wedding reception. We haven’t done too much to the living room yet; we added a projector screen and are mainly using it for storing some of our extra stuff until we finish the master bedroom. We replaced the light fixture in the hall, and upgraded all the light switches in the house to the rocker style. We repainted the bathroom, removed the medicine cabinet, changed the light fixture, and painted the vanity and changed the hardware. We also added a new shower curtain to match. In the original green room, due to it’s carpet color, we originally replaced the floor in the closet with vinyl planking. After seeing how easy it was, we took on the task of redoing the entire rooms floor, which was not an easy task. we remove the wood from the closet to be replaced with matching floor eventually, I also painted the bedroom the two shades of orange, we moved in, and that is the state of our orange room. Finally, our current project is the master bedroom, or our new green room. We just finished laying the flooring on Saturday. There is still a lot of work we want to do in that room before the new unveiling, but I hope this helps build some excitement for the next unveiling, which will be coming in the next two weeks or so.
A Year’s Worth of Projects
A year is so long, yet so short. We were able to accomplish so much because of the blessing we’ve received this year and from taking things in stride. We are happy for our new experiences and are content with this house even as we continue to find more problems. We aren’t sure if we’ll keep this house forever, but we are happy for all the good things this house is providing for us. This Lustron gives my husband and I something to do together, to bond over, and to dream for. We hope for nothing but the best for this house in the future, and we hope our fingerprint on this house improves the beauty of this old Lustron, rather than hinders it’s potential.

It’s been too hot to cook lately, so for several days my husband and I have been doing sandwiches and chips with dip. Nothing is faster or as tasty to go with your summer sandwich. It doesn’t take a lot of effort, but like deviled eggs, the effort is always appreciated at any summer picnic. Treat yourself and your family with this easy and quick dip. You can half the recipe, and add the amount of soup mix that you desire!
I have been searching tirelessly for new recipes to use all the cucumbers I’ve gotten this year from the garden. Talking to other locals, I have found out everyone is having a good year for cucumbers, so naturally all ingredients to make dill pickles are sold out withing a 20 mile radius. As a result, I’m stepping out of my comfort zone and making new recipes. This recipe had lots of great comments, as you’ll see if you look at the original post. I have had to make alterations to the recipe, such as excluding sesame seeds and substituting in white wine vinegar, since I do not have rice wine vinegar. With the substitute, I had to dilute the mixture a bit. This recipe makes lots of marinade, so cut as many cucumbers as you need to serve or you think you can eat. I probably wouldn’t add more than 3, maybe 4 cups of cucumbers before doubling the marinade.
Salsa in a great snack. It’s healthy and goes with so many different types of food. I made this salsa with what I got from the garden and a bit of lemon and spices. This salsa is refreshing and original. The cucumber flavor brings a light and fresh flavor to any dish. You can alter the amount of chili powder to suit your heat preference, the recipe below is for a very mild salsa. The mixture did very very watery, so if you’d like, you could core the cucumbers to get less juice, or you could just decant some of the liquid from the mixture before adding your spices. This went great with tacos and chips, but be creative and try this with something new!
