Shrimp stock is easy to make and versatile in many recipes. Shrimp stock can be used in soups, sauces, and additional flavoring in many recipes. First, stock should be seasoned to your liking. I added some of my seasoning to the recipe below, but I also added additional garlic powder and salt to taste once strained. Second, if you are using a finer shell for your stock, you could also strain through a cheese cloth and I would recommend that. I froze my stock. I froze about 2 cups in a larger container, and I froze another 4 cups as cubes. You can boil your broth longer to boil off more liquid which will make a stronger broth. I also didn’t strain off any fat/oil from my stock. If that is a concern of yours, you can remove your oils before preserving. This recipe makes about 5-7 cups of stock.

What You Will Need

  • 1/2 to 1 cup Shrimp Tails/Shells
  • 1 Medium Onion, halved
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Butter
  • 9 Cups Water
  • Large Sided Frying Pan / Dutch Oven and Lid
  • Strainer
  • Freezer containers/Freezer Bags/Canning Jars

Directions

  1. Heat a frying pan/dutch oven over medium high heat. Add butter and shrimp shell together, and cook for 1-2 minutes or until butter begins to brown. Add Onion and 1/2 of water. Bring to a high boil. Once boiling, reduce heat to medium, add remaining water, and return to a simmer. Once simmering, reduce heat to low and cover. Cook for 3 hours stirring occasionally.

2. Once cooked, place strainer over another container and strain out your stock. Discard shells and onion. Use right away, or let cool for 1 hour.

3. Once cooled, you reach the preservation stage. You could place it in the fridge, pressure can it, or freeze it. If you plan to keep it in the fridge, move the stock to several Quart Jars and store for no more than 4 days. If you choose to freeze, there are many approaches. You can freeze in 2-3 cup increments in glad containers, freeze your broth in glass jars with the lid off then add the lid when it’s fully frozen, and/or freeze your broth in ice cubes trays then transfer them to a freezer bag. There are many different choices, but these are the most common I’ve seen.

Kielbasa Curry Fried Rice

As the weather begins to cool down, nothing is more comforting than a warm meal. Fried rice is a great way to use leftover rice and there are so many ways to make it, that there is no reason to get tired of the flavor! For this recipe I used up what I had left of a green pepper, then added just under 1/2 a bag of chopped and frozen peppers and onion. I also used 1/3 of a very large zucchini and I can say I now enjoy the flavor and consistency a lot more than before. I also sliced my kielbasa without removing the casing. If you are serving someone who may have a hard time chewing, you will want to remove the casing, if not, the kielbasa is only harder to chew and the flavor is no different. This recipe made many servings! It made 5-6 Adult sized servings.

What You Will Need

  • 3 Tbsp Oil
  • 1 13 Oz Package of Kielbasa, Sliced (opt. remove casing)
  • 1 cup sliced peppers
  • 1 cup diced onion
  • 1 cup diced Zucchini
  • 3-4 cups cooked rice
  • 1 cup beef broth
  • 1 Tbsp Curry Powder
  • 1/2 Tbsp Turmeric powder
  • 2 tsp Garlic powder
  • 2 tsp paprika
  • 2 tsp ground ginger
  • 2 tsp ground cayenne pepper
  • Wok/Large Dutch Oven

Directions

  1. Prepare your ingredients. Heat wok/dutch oven over medium heat. Add oil.
  2. Once hot, add zucchini, peppers, and onion, and cook until heated through. Add kielbasa and spices. Coat everything with seasoning and cook Kielbasa until heated through, 3-4 minutes.
  3. Add rice and broth. Cook for another 4-5 minutes until everything is incorporated and heated through. Let cook 5 minutes before serving.

Chicken Veggie Stir Fry Side

If you have rice and any vegetables, you can make this dish. Cook your veggies in oil, add your cooked rice and broth, cook together and serve. I added 1 Tbsp soy sauce to the whole wok before serving. This recipe makes 3-4 side sized servings. I used leftover rice, but you can also make new rice for this dish. If you’d like, you can also make this vegetarian by using vegetable stock instead of chicken.

What You Will Need

  • 2 Tbsp Oil
  • 1 Cup Sliced Carrots
  • 1/2 Diced Onion
  • 1 Cup Sliced Green Beans
  • 2 Garlic cloves, Minced
  • 2 Cups Cooked Rice
  • 1 Cup Water
  • 1 Chicken Bouillon
  • Wok and Spoon

Directions

  1. Place wok over medium high heat. Add oil. Add Carrots, onion, green beans, and garlic. Cook until everything is tender.
  2. Add cooked rice, water and bouillon. Continue to cook over heat until there is no excess liquid.
  3. Remove from heat and serve right away.

Pork Over Buttered Noodles

This is a recipe I made in order to use up some extra pulled pork in my fridge. It is a very straight forward recipe. I didn’t add any seasoning to it, because the pork had more than enough on it’s own, however, if you are gonna make this from pork butt, or unseasoned pork, you can play with some fun french herbs like thyme, rosemary, marjoram, or basil. This also tasted great over noodles! This recipe made 4 adult sized meals.

What You Will Need
  • 2 Cups Shredded Pork
  • 2 Garlic Cloves, diced
  • 3 Shallots, sliced
  • 2 Medium Carrots, slices
  • 1 Tomato, quartered
  • 1 Tbsp Butter
  • 3 Cups Water
  • 2 Beef Bouillon Cubes
  • A Dutch oven and spoon
  • A cutting board and knife
  • 3-4 cups cooked egg noodles with butter for serving
Directions
  1. In a dutch oven, add butter, carrots, garlic, and onion. Cook over medium heat until soft and have added color.
  2. Add tomato, water, and bouillon, and bring to a boil. Once boiling, add pork. Cook for 4-5 minutes.
  3. Remove from heat then serve over noodles.

Taco Scrambled Eggs

Tacos are great to eat, but their leftovers are even better to work with. I could have made a casserole or just froze the meat for next time, but one of my favorite things to do with these leftovers is to make taco scrambled eggs. I’ve been making taco scrambled eggs since I was a kid. It’s simple! Just throw everything into a pan and in just a few minutes you’ll have a delicious, filling, savory breakfast. I used shredded shape cheese then topped it with slices of American. I also used my homemade cucumber salsa with this dish. Not only did it add beautiful color to this dish, but it was so refreshing with these eggs and brings a new flavor than normal salsa, though I love this with normal salsa too!

What You Will Need
  • Leftover Taco Meat
  • Shredded/Sliced Cheese
  • Salsa
  • 4 Eggs
  • 1/2 cup Milk/water
  • 1 Tbsp Butter
  • Bowl and fork
  • Frying pan and Spatula
Directions
  1. Microwave taco meat for 30 seconds to be able to pour from container.
  2. Heat a frying pan over medium heat. Add butter, melt and coat bottom of pan.
  3. In a Bowl, add your eggs and milk/water. Whisk with a fork until combined.
  4. Add your egg mixture to the hot pan. Top with 3/4 of your cheese and your taco meat. Stir the mixture until you see no visible raw egg.
  5. Reduce heat to low, top with remaining cheese. Let cook until cheese is melted. Remove from heat and serve with salsa.
