Pigs in a Blanket (Crescent Dogs)

I’ll usually just use a pre-made dough when I make these, however since I just made pizza the other day, I decided I’d just make one pizza and save the rest of the dough for this! When I do buy pre-made dough, I always get pizza crust. Actual crescents are too buttery and sweet to compliment the hot dog well in my opinion. I’m also a big fan of corn dogs so that probably plays a role.
I like to serve these with mustard or dip made with mustard and french onion soup mix packets. I also cut the dogs in half to make smaller dogs, however you can use bigger dogs if you cut the dough wider. I will also instruct you to fold the dough over itself more than I did, since most of mine popped open.

  1. Preheat oven to 400 F. Grab a large baking sheet and spray with nonstick spray.
  2. Cut your hot dogs in half.
  3. Open a roll of pizza dough or make your favorite pizza dough. You will only need enough dough for half a pizza.
  4. Roll out pizza dough into a square that is only about 1/4 inch thick.
  5. Cut the dough into 1+ inch wide strips. Wrap the dough around your dog, overlapping the dough 1/3 inch. Press the dough together, and place seam side down on prepared baking sheet.
  6. Bake for 18 minutes or until golden. Remove from oven and serve!

Homemade Pizza

Rolling out dough is probably one of the hardest tasks for me. I always have to roll it out with a rolling pin on my counter because no matter how much I try to hand toss it, I always tends to tear in the center. So, now I use a french rolling pin, and that helps me a lot. Otherwise, making pizzas are easy so long as you give yourself time to let the dough rise fully. To speed things up, you can also make the dough a day early. Also, since this recipe makes 2 pizzas, it’s a fun idea to make them with different toppings, but the world is your oyster! Do as you like!

  1. Into a bowl, bloom 3 1/2 tsp of yeast (1 1/2 packets) with 1/2 cup of warm water.
  2. Add 3 Tbsp oil, 6 cups of flour, and 1 1/2 cups of water. Mix into a dough, then let rest covered until doubled in size.
  3. Preheat oven to 400 F
  4. Punch down dough, remove from bowl, and split in half.
  5. Roll out dough into rounds about 1/4 to 1/2 inch thick. They should have a diameter of 14-16 inches.
  6. Spray your pizza pan with non stick spray, if applicable, and place your pizza on top. If you are using a pizza stone, you can make it on your stone or your pizza peel.
  7. To make my pizza sauce, open a small can (8 oz) of tomato sauce and add 1 Tbsp of garlic powder, 1 1/2 tsp of onion salt, 2 Tbsp dried (or fresh) minced onion, and 1 Tbsp Oregano. (You’ll have to double this for both pizzas.)
  8. Top each pizza with tomato sauce, 8 oz of mozzarella, and parmasean sprinkled over the entire top of the pizza and crust.
  9. Bake for 20 minutes. Cut and serve.

Oven-Fried Potatoes

This is another one of those dishes what require little work for tasty food that can serve lots of people. This is one of my favorite salty sides dishes and it’s good alone, with ketchup, or served with other food.

  1. Preheat oven to 400 F
  2. Pick out 5-6 medium potatoes. Scrub them under warm water to remove any dirt on the skin. On a cutting board, dice the potatoes into 1/2 inch cubes and place onto a baking sheet
  3. Pour 2 Tbsp of oil onto the potatoes. Stir with your hands until they are all coated. Sprinkle potatoes with a generous amount of salt, 2-3 Tbsp of salt. Once again hand stir. Spread them into a single layer of potatoes.
  4. Bake in oven for 25 minutes. Remove from oven and stir, then return to oven for an additional 20 minutes.
  5. Remove from oven, stir potatoes again. Let sit for 5 minutes, add additional salt to taste, then serve.

Cheese Steaks with Fried Onions

Cheese steaks are an easy dinner/snack that can serve a lot of people with little effort in cooking. If you plan to cook lot of steaks, I would recommend using a skillet, but otherwise a frying pan should be enough. you can also cook the steak and just place the cheese on your bread. This is one of the best sandwiches I’ve had in a while and I highly recommend.

This is a good option also for a sandwich buffet. Make up the onion and meat, then make a spread of cheeses, veggie toppings like lettuce, and tomatoes, dressings like mayo, ketchup, and ranch, and other sides like chips, pasta salads, and wings.

  1. Chop 1/2 an onion into slices. Heat a small frying pan to medium-low heat. Add 1 1/2 Tbsp of butter and onion. Stir occasionally.
  2. In a large frying pan, add 1 Tbsp of butter, melt, then cook steak pieces until browning appears on both sides.
  3. Add cheese to your bread, add desired amount of meat, onion, and additional toppings as desired.

Breakfast Sandwiches

I make breakfast sandwiches every Sunday night along with making dinner. Josh has a quick breakfast before work everyday and though I can make these sandwiches fresh in the morning, I choose to make them in bulk on Sunday night, freeze 3 of them and let the others sit in the fridge. Once the ones in the fridge are gone, you have to start defrosting the frozen ones in the fridge the night before. To warm up the defrosted sandwiches, I microwave them unwrapped on a small plate for 25 seconds. I also add a slice of cheese to my sandwiches, but I’ll also add lunch meat or sausage patties if I have any.
Also, my fried egg looks a bit burnt, however, my butter fats just burnt a bit, that is why it has such a dark color. I also cook my eggs to over easy, so when it’s bitten into the yolk runs everywhere. Freezing the sandwiches doesn’t change the yolk’s runniness.

  1. First, toast 10 pieces of bread for 5 breakfast sandwiches. Place on a plate. Begin to heat a small frying pan on medium.
  2. Add about 1/2 Tbsp of butter to the frying pan and coat the bottom of the pan. Crack one egg into the frying pan. Throw away the shell and wash your hands.
  3. Returning to the egg. Once the bottom of the egg is fully opaque, shake the pan to make sure the egg moves, if not, free the egg from the bottom of the pan with your spatula carefully.
  4. Once free, slip your spatula under the egg and carefully flip the egg using gravity and little “force”. Cook until the white around the yolk is firm. Remove from heat and transfer onto a set of toast.
  5. Repeat steps 2-4 for the remaining sandwiches.
  6. Finally, add a slice of cheese and any meats to each sandwich. Wrap each sandwich individually with saran wrap. Freeze or refrigerate as desired.
