Tomato Cucumber Salad

Even though I pulled my cucumbers a couple weeks ago, I still have a small mound of cucumbers sitting on my counter. At the same time, my in-law’s garden is just full of cherry tomatoes. So, here is a simple summer salad that uses up some items that may still be plentiful for you this time of year. Add a bit of acid with vinegar or lemon, and balance it with a bit of sugar, if desired.

What You Will Need

  • 1 cup Cherry Tomatoes, Halved
  • 1 Small Cucumber, Peeled and Julienned
  • 1/2 Medium Onion, Diced
  • 1 Tbsp Lemon Juice
  • 2 tsp Apple Cider Vinegar
  • 1 Tbsp Sugar
  • Serving Bowl and Spoon

Directions

  1. Prepare your vegetables and add you serving bowl.
  2. Add Lemon juice, vinegar, and sugar. Stir.
  3. Serve right away, or refrigerate and serve later.

Carrot Top Pesto Shrimp

When I froze this pesto, I didn’t add any parmesan, so if you are using store bought or even your own homemade pesto, please note that I did not add double the cheese. Also based on flavor, add some sugar or salt to flavor the sauce before adding the pasta.

This pasta is easy and straight forward, pasta, pesto, and shrimp. I didn’t strain my pasta in a colander, and instead used a slotted spoon to transfer the pasta to the pesto. I then boiled my shrimp for 1-2 minutes before using the same spoon to transfer them to the pasta mixture. I boiled my shrimp because I bought precooked shrimp, and at the time I hadn’t thawed them, so it was a great way to warm them up. If you will be doing that yourself, just be careful not to overcook the shrimp. Shrimp is fully cooked when it forms a “c” in shape. If the shrimp looks like an “o” then is will be over cooked, and tougher to eat. This recipe made 4-5 adult sized portions.

What You Will Need

  • 2/3 cup Pesto
  • 1/2 cup Parmesan
  • 1/2 Tbsp Sugar
  • 1/2 cup Pasta Water
  • 1 1/2 cup Rotini Pasta
  • 1 1/2 Cup Shrimp
  • Large frying pan
  • Large sauce Pan & Colander

Directions

  1. Use the large frying pan with 1/2 Tbsp oil to cook any raw shrimp, 2 minutes per side in a hot pan. If using cooked and frozen shrimp, place your shrimp in a bowl with cold water for 5-10 minutes to thaw then strain through a colander.
  2. Fill a large sauce pan 3/4 with water and bring the water to a boil. Add rotini and cook until al dente. Reserve pasta water before straining.
  3. In a large frying pan, add pesto, sugar, and parmesan. Heat over low heat and combine.
  4. Add cooked pasta, cooked shrimp, and pasta water to pesto. Stir together and heat for a 3-5 minutes over low heat. Serve immediately.

Cucumber Salsa

Salsa in a great snack. It’s healthy and goes with so many different types of food. I made this salsa with what I got from the garden and a bit of lemon and spices. This salsa is refreshing and original. The cucumber flavor brings a light and fresh flavor to any dish. You can alter the amount of chili powder to suit your heat preference, the recipe below is for a very mild salsa. The mixture did very very watery, so if you’d like, you could core the cucumbers to get less juice, or you could just decant some of the liquid from the mixture before adding your spices. This went great with tacos and chips, but be creative and try this with something new!

What You Will Need
  • 3 medium cucumbers (small if store bought), diced
  • 2 small vine tomatoes, diced
  • 1 small onion, diced
  • 2 Tbsp lemon juice
  • 1 Tbsp garlic powder
  • 2 tsp onion salt (or 1 tsp normal salt)
  • 2 Tbsp chili powder
  • Blender
  • Storage/Serving bowl
Instructions
  1. Prepare all your veggies. Add to a blender. Add lemon juice and cover.
  2. Using the dice setting, hold for 5 seconds. Scoop mixture into your bowl. Add the remaining ingredients to your taste.
  3. Chill 2-3 hours before serving for better taste, or serve right away.

Cucumber Lemon Ice Cubes

This is a quick way to a refreshing glass of juice in the summer. Simply blend, strain, pour, and freeze. You can also transfer them from the tray into a freezer bag to have lots prepared for your next picnic. The cucumber flavor is perfectly complimented with the lemon and sugar. The salt helps negate some sour, and that helps the cucumber flavor come out on top. It is helpful to serve this drink with a straw, since the cucumber and sugar will settle to the bottom as the frozen cubes melt. You can also omit sugar and salt if you prefer a flavored water experience instead. This is also a great opportunity to use up your extra cucumbers before they go bad!

  1. Wash 3 medium cucumbers. Slice into 1/2 inch slices.
  2. In a blender, add 2 cups of lemon juice, 10 Tbsp sugar, a pinch of salt, and a few cucumber pieces.
  3. Blend on high for 30 seconds, remove lid and add more cucumber pieces.
  4. Repeat step three until all cucumber is blended.
  5. Strain through a fine mesh strainer. Return to a cleaned blender, then pour into an ice cube tray.
  6. Carefully transfer to freezer and freeze for 8-24 hours, till solid.
  7. When serving, add 3 cubes per 16 oz of liquid.

Tilapia Fish Tacos

Fish tortillas add a bright fresh flavor to a classic Hispanic meal. The spices in this meal are very light, but your tacos will have lots of flavor. Most of the flavor comes from your toppings. Toppings like avocado, sour cream, and different salsas will change the flavor of your tacos. The fish is very neutral in flavor and will go great with anything that won’t over power it. My tacos look a bit watery plated because my cheese was frozen, so there was some water from that, and the salsa was homemade and a bit watery.

  1. Heat a large skillet over medium heat. Prepare flour tortillas.
  2. Add 3 Tbsp oil to skillet. Add 2 tilapia fillets. After 3 minutes, flip tilapia.
  3. Add 3 tsp Cumin, 2 tsp ground cayenne pepper, and 2 Tbsp Lemon juice. Cook the fish until it can be broken apart. Break up into large flakes, and stir in flavoring. Add 3-4 Tbsp diced chives, stir in, then remove from heat.
  4. Place on tortillas, top with cheese, salsa, lettuce, or any other desired toppings.
