Grilled Zucchini

Zucchini is a plant where you only have to plant a couple, and soon you’ll be up to your nose in fruits! I didn’t grow up with zucchini, and I’m not a big fan of their texture. Because of this, when I get them, I have to come up with creative ways to try and enjoy them. This was of preparing zucchini was pretty good. I enjoyed it and made me think zucchinis aren’t that bad. It you aren’t a big fan of zucchinis, this is a good opportunity to try them with a different flavor and texture!

  1. Wash your zucchini. Place on a cutting board and cut them into quarters as long sticks.
  2. Heat your grill to a temperature of 300 F with the lid closed. Place the zucchini on the grates with an inside face down. Brush with oil, and sprinkle with Italian seasoning.
  3. Grill for 2-3 minutes, then flip to another inside face. Grill for another 2-3 minutes, then flip it to the back, and close lid for 10 minutes.
  4. Remove from grill and place on a serving plate. Serve right away.

Sliced Cucumbers in Italian Dressing

This snack/side is as simple as it sounds, slice a cucumber and place it in Italian dressing. This is a light and flavorful side dish and a healthy snack. So consider serving this with your next meal.

  1. Wash cucumber(s). Slice. Place in a bowl. Cover with Italian dressing. Eat right way, or let sit overnight for more flavor.

Picnic/Cookout Foods

Happy 4th, even if you don’t celebrate! I’ve been working on this list for a couple days, but as gatherings are being allowed again where I am, and as the summer continues to roll in, I figured it be a good opportunity to get you a list of some summer cookout or picnic foods. I’ve made four categories: main courses, sides, snacks, and desserts. The pictures are also in order as they are listed below!

Game Appetizers & Sides

Mild Buffalo Chicken Nuggets

  1. On a baking sheet bake 1/2 a bag of chicken nuggets as directed on package.
  2. In a serving bowl, microwave 3 Tbsp of butter for 25 seconds.
  3. Add to melted/softened butter, 4 Tbsp of wing/hot sauce (Texas Pete, Frank’s), 1 Tbsp of worcestershire sauce, 1 tsp of cayenne, and 1 1/2 tsp of garlic powder. Mix and microwave for another 20 seconds.
  4. Once chicken is cooked, transfer into serving bowl. Toss until coated then serve with blue cheese.

Cheese, Sausage, Mustard, & Crackers

  1. Cut up your choice of meats and cheeses. Serve on crackers with mustard.

Cheesy Braided Bread

  1. Preheat oven to 400 F.
  2. Using 1/2 a pizza amount of dough, roll into a rectangle until about 1/4 inch thick.
  3. Place shredded cheese down the center 1/3 of bread. Place cuts down either side of the bread, even on both sides.
  4. Begin braiding by placing one piece from one side over one from the other. Continue until all pieces are tucked under.
  5. Place into a large baking sheet that is sprayed with cooking spray. Top with shredded cheese.
  6. Bake for 22 minutes. Let cool for 5 minutes, slice and serve with choice dipping sauce.
